  • Mini tortillas or soft taco shells: 6
  • Salsa: 1/2 cup (120 ml)
  • Black beans, rinsed and drained: 1/2 cup (120 ml)
  • Corn kernels: 1/2 cup (120 ml)
  • Jalapenos, sliced: 1-2 (optional for extra kick)
  • Fresh cilantro, chopped: For garnish
  • Sour cream: For serving

Instructions:

  4. Introduce the ground beef into the skillet.
  5. Brown the beef, breaking it apart as it cooks for about 5-6 minutes.
  6. Add the taco seasoning, mix well ensuring the beef is well coated.
  7. Stir in black beans and corn kernels, cooking for another 2 minutes.
  8. Take a mini tortilla, press it into the muffin tin slot, shaping it like a cup.
  9. Spoon the beef mixture into the tortilla cups.
  10. Top each with a spoonful of salsa and sprinkle with grated cheddar cheese.
  11. Place the muffin tin in the preheated oven and bake for about 12-15 minutes or until the cheese is melted and bubbly.
