Start by marinating the shrimp.
In a bowl, combine shrimp, olive oil, salt, and freshly ground black pepper.
Mix until the shrimp are well-coated.
Let the shrimp marinate for about 10 minutes while you prepare the cilantro sauce.
For the sauce, combine cilantro, garlic, lime juice, green chili (if using), Greek yogurt, and water in a blender.
Blend until smooth.
Taste and adjust the seasoning if needed.
Preheat your grill over medium-high heat.
Once hot, place the marinated shrimp on the grill.
Cook each side for about 2-3 minutes or until they become pink and slightly charred.
Remove the shrimp from the grill and let them rest for a couple of minutes.
