Ingredients

  • Chicken breasts: 2 large pieces around 1 lb [450g]
  • Pumpkin: 2 cups diced [around 500g]
  • Chicken broth: 3 cups [710 ml]
  • Onion: 1 large finely chopped
  • Garlic cloves: 3 minced
  • Olive oil: 2 tablespoons [30 ml]
  • Thyme: 1 teaspoon [5 ml]
  • Rosemary: 1 teaspoon [5 ml]
  • Salt and Pepper: To taste

Instructions

  • Preparation: Begin by washing your chicken breasts and patting them dry. Dice the pumpkin into medium-sized cubes and set aside.
  • In a large pot, heat the olive oil over medium heat. Add the chopped onion. Sauté until it turns translucent. 3. Add the minced garlic to the pot. Sauté for another 2 minutes, ensuring it doesn’t brown.
  • Incorporate the chicken pieces into the pot. Brown them on all sides for about 5-7 minutes.
  • Once the chicken is seared, pour in the chicken broth.
  • Bring the broth to a boil. Once boiling, reduce the heat and let it simmer.
  • Add the diced pumpkin, thyme, and rosemary. Season with salt and pepper.
  • Let the stew simmer for about 30 minutes, or until the pumpkin is tender and the chicken is cooked through.
  • Check for seasoning and adjust if necessary. Once done, turn off the heat.

Notes

TIPS FOR THE PERFECT STEW:
1. Always use a fresh pumpkin for the best flavor. Pre-packed cubes may not offer the same taste.
2. You can use chicken thighs for a juicier stew.
3. To thicken the stew, you can mash some of the cooked pumpkin and mix it back into the stew.
4. Don’t rush the simmering process. The longer it simmers, the more flavors meld together.
5. Fresh herbs can make a significant difference. Consider using fresh rosemary and thyme if available.
SERVING SUGGESTIONS:
  • Serve this Tasty chicken and pumpkin stew hot, garnished with fresh parsley.
  • A slice of crusty bread on the side is perfect for soaking up the broth.
  • A green salad with a light vinaigrette can complement the richness of the stew.
  • For those looking for a bit more heat, a sprinkle of chili flakes can elevate the dish.
