Ingredients

  • – 2 Apples 240 grams
  • – 1 cup Almonds 150 grams
  • – 1 cup Blackcurrants 140 grams
  • – 2 cups All-purpose flour 250 grams
  • – 1 cup Sugar 200 grams
  • – 1/2 cup Butter 113 grams
  • – 1/2 cup Milk 118 ml
  • – 2 Eggs
  • – 1 teaspoon Baking powder 5 grams
  • – A pinch of Salt

Instructions

  • Preheat the oven to 350°F (175°C).
  • Grease a muffin tin or line it with muffin liners.
  • In a bowl, combine the all-purpose flour, baking powder, and salt.
  • In a different bowl, beat the eggs and sugar until it becomes fluffy.
  • Melt the butter and let it cool. Mix it into the egg and sugar mixture.
  • Slowly add the flour mixture to the egg mixture. Add milk and mix well until the batter is smooth.
  • Chop the apples and almonds into small pieces. Add these along with the blackcurrants to the batter.
  • Scoop the batter into the muffin tin, filling each cup to about two-thirds full.
  • Bake the Apple, almond, and blackcurrant muffins for about 25 minutes, or until a toothpick inserted in the center comes out clean.
  • Remove the muffins from the oven and let them cool on a wire rack.
