Ingredients

  • * 2 cups all-purpose flour about 240g
  • * 1 1/2 teaspoons baking powder 7.5ml
  • * 1/2 teaspoon baking soda 2.5ml
  • * 1/2 teaspoon salt
  • * 1 tablespoon ground cinnamon 15ml
  • * 1/2 teaspoon ground nutmeg
  • * 1/2 cup unsalted butter softened (115g)
  • * 1 cup granulated sugar about 200g
  • * 2 large eggs
  • * 1 teaspoon vanilla extract 5ml
  • * 1/2 cup sour cream 120ml
  • * 2 cups diced apples peeled and cored

Instructions

  • Preheat your oven to 375°F (190°C). Line a muffin tin with paper liners or grease with butter.
  • In a medium-sized bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, and nutmeg. Set aside.
  • In another bowl, beat the butter and sugar until light and fluffy.
  • Add eggs, one at a time, beating well after each addition. Stir in vanilla extract.
  • Gradually mix in the dry ingredients until just combined.
  • Fold in the sour cream, followed by the diced apples.
  • Divide the batter evenly among the muffin cups.
  • Bake for about 20 minutes or until a toothpick inserted in the center comes out clean.
  • Let Apple Spice Muffins cool in the tin for 5 minutes before transferring to a wire rack to cool completely.
