Slice the avocado, make it pretty.
Cut the cucumber and carrot into thin strips.
Rolling the Cauliflower Rice Sushi Rolls:
Place a nori sheet on a sushi rolling mat (or plastic wrap if you’re in a pinch).
Spread that tasty cauliflower rice over the nori.
Add avocado, cucumber, carrot, and cilantro.
Add a sprinkle of sesame seeds for crunch.
Roll it up tight, cut into 8 pieces, and repeat.
