AULIFLOWER RICE SUSHI ROLLS

Ingredients

  • A whole cauliflower (about 600g or 21 oz – you know, the regular size!)
  • A teaspoon of salt 5g or so, not too much!
  • A tablespoon of your favorite olive oil 15ml or about 0.5 fl oz
  • THE SUSHI ROLLS:
  • 4 sheets of nori seaweed
  • A ripe avocado peeled and sliced
  • One fresh cucumber julienned
  • A carrot julienned
  • A handful of fresh cilantro leaves or more if you love ’em like I do
  • Sesame seeds for sprinkling about a tablespoon (9g or 0.32 oz)

Instructions

Cauliflower Rice First:

  • Cut the cauliflower up into florets, like little trees.
  • Either blend or grate them until they look like rice.
  • In a pan over medium heat, mix with olive oil and salt.
  • Cook for 5-7 minutes, or until it’s just tender. Set aside for now.

Veggie Prep Time:

  • Slice the avocado, make it pretty.
  • Cut the cucumber and carrot into thin strips.
  • Rolling the Cauliflower Rice Sushi Rolls:
  • Place a nori sheet on a sushi rolling mat (or plastic wrap if you’re in a pinch).
  • Spread that tasty cauliflower rice over the nori.
  • Add avocado, cucumber, carrot, and cilantro.
  • Add a sprinkle of sesame seeds for crunch.
  • Roll it up tight, cut into 8 pieces, and repeat.

Notes

TIPS

  1. Easy on the cauliflower rice; you don’t want to tear the nori.
  2. Wet the knife for smooth cutting – learned this the hard way!
