Begin by soaking the dried chickpeas overnight. If you’re using canned chickpeas, you can skip this step.
Preheat your oven to 375°F (190°C).
In a food processor, combine chickpeas, parsley, cilantro, onion, garlic, cumin, coriander, chili powder, salt, and pepper. Process until a coarse mixture forms.
Add in baking powder and pulse a few more times.
Form the mixture into small balls or patties and place them on a baking sheet lined with parchment paper.
Lightly brush each falafel with olive oil.
Bake in the preheated oven for about 25-30 minutes, or until they’re golden brown and crispy.
While the falafel is baking, prepare the Tahini Sauce. Mix tahini, lemon juice, minced garlic, salt, and water in a bowl until you get a smooth consistency.
