Ingredients

  • Chickpeas: 1 cup dried (or 2 cups, canned) [250g]
  • Fresh Parsley: 1 cup chopped [15g]
  • Fresh Cilantro: 1 cup chopped [15g]
  • Onion: 1 medium chopped
  • Garlic: 3 cloves minced
  • Ground Cumin: 2 tsp [10ml]
  • Ground Coriander: 1 tsp [5ml]
  • Chili powder: 1/2 tsp [2.5ml]
  • Baking powder: 1 tsp [5ml]
  • Salt: 1/2 tsp [2.5ml]
  • Black pepper: 1/4 tsp [1.25ml]
  • Olive Oil: For brushing
  • For the Tahini Sauce:
  • Tahini: 1/2 cup [120ml]
  • Lemon Juice: 2 tbsp [30ml]
  • Garlic: 1 clove minced
  • Salt: To taste
  • Water: 2-3 tbsp to thin [30-45ml]

Instructions

  • Begin by soaking the dried chickpeas overnight. If you’re using canned chickpeas, you can skip this step.
  • Preheat your oven to 375°F (190°C).
  • In a food processor, combine chickpeas, parsley, cilantro, onion, garlic, cumin, coriander, chili powder, salt, and pepper. Process until a coarse mixture forms.
  • Add in baking powder and pulse a few more times.
  • Form the mixture into small balls or patties and place them on a baking sheet lined with parchment paper.
  • Lightly brush each falafel with olive oil.
  • Bake in the preheated oven for about 25-30 minutes, or until they’re golden brown and crispy.
  • While the falafel is baking, prepare the Tahini Sauce. Mix tahini, lemon juice, minced garlic, salt, and water in a bowl until you get a smooth consistency.

Notes

TIPS:
If the falafel mixture feels too wet, you can add a tablespoon of flour to help bind it.
For an extra crispy finish, you can broil the falafel for the last 3-5 minutes of baking.
Store leftover falafel in an airtight container in the fridge for up to 3 days.
