Ingredients

INGREDIENTS: THE MAGIC MAKERS

  • Beef thinly sliced: 1/2 lb (225g)
  • Bell peppers red and green: 1 each, sliced
  • Carrots: 2 medium sliced into thin circles
  • Snow peas: 1/2 cup 65g
  • Mushrooms: 1/2 cup 60g, sliced
  • Ginger: 1 inch 2.5 cm, minced
  • Garlic: 3 cloves minced
  • Soy sauce: 4 tbsp 60 ml
  • Cornstarch: 2 tbsp 30g
  • Beef broth: 1/2 cup 120 ml
  • Vegetable oil: 2 tbsp 30 ml
  • Salt and pepper to taste
  • Rice or noodles for serving: 2 cups 475 ml

Instructions

COOKING STEPS: CREATING THE MAGIC

  • Prep Ahead: Start by slicing and dicing all your veggies and beef. Remember, the thinner the beef slices, the better they’ll soak up the flavor!
  • Sauce Time: In a small bowl, mix together soy sauce, cornstarch, and beef broth. This will be your thickening agent and will give that glossy look to your Beef Chop Suey.
  • Wok Magic: In a large wok or pan, heat up the vegetable oil over medium heat. Toss in the ginger and garlic. Sauté them until they’re fragrant but be careful not to burn them.
  • Beef In: Add the beef slices to the wok. Cook until they turn a beautiful brown. This usually takes about 3-4 minutes.
  • Veggies Galore: Toss in the bell peppers, carrots, mushrooms, and snow peas. Stir-fry them with the beef for another 3-4 minutes.
  • Sauce Splash: Now, pour in the sauce mixture. Stir well to ensure every piece of beef and veggie is coated.
  • Finishing Touches: Let the Beef Chop Suey simmer for about 3 minutes or until the sauce thickens. Don’t forget to taste and season with salt and pepper.

Notes

Always prep your ingredients before you start. This “mise en place” approach ensures you’re not scrambling mid-cook.
Using a well-seasoned wok makes a difference. It adds that ‘wok hei’ or breath of the wok, giving an authentic taste.
Control your heat. High heat is great for stir-frying but remember to lower it when adding the sauce.
Feel free to customize! Love a particular veggie? Add it in! The more, the merrier.
