Ingredients

  • - Cauliflower: 1 large head about 2 pounds [907 grams]
  • - Eggs: 2 large
  • - Grated Parmesan cheese: 1 cup 100 grams
  • - Mozzarella cheese: 1 cup shredded (112 grams)
  • - Dried oregano: 1 teaspoon 5 grams
  • - Garlic powder: 1 teaspoon 3 grams
  • - Salt: 1/2 teaspoon 3 grams
  • - Olive oil: for brushing

Instructions

  • Preheat your oven to 425°F (220°C).
  • Clean the cauliflower and break it into florets.
  • Place the florets in a food processor and pulse until it looks like rice.
  • Transfer the cauliflower rice to a microwave-safe bowl and microwave for 5 minutes.
  • Allow the cauliflower rice to cool, then transfer to a clean kitchen towel.
  • Squeeze out as much water as you can. This is crucial for a crunchy Cauliflower pizza base.
  • In a large bowl, combine the drained cauliflower rice, eggs, Parmesan, mozzarella, oregano, garlic powder, and salt. Mix well.
  • On a lined baking sheet, spread the cauliflower mixture into a round pizza shape, keeping the base about 1/4 inch thick.
  • Brush the top with olive oil.
  • Bake in the preheated oven for about 25 minutes or until golden and crisp.
