Ingredients

  • - Chicken breast: 1 lb approx. 450 grams
  • - Black beans: 1 can 15 oz or 425 grams drained and rinsed
  • - Olive oil: 2 tbsp 30 ml
  • - Tortillas: 6 medium-sized
  • - Red onion: 1 finely chopped
  • - Garlic cloves: 2 minced
  • - Ground cumin: 1 tsp 5 grams
  • - Paprika: 1 tsp 5 grams
  • - Salt: to taste
  • - Pepper: to taste
  • - Fresh coriander: ½ cup chopped
  • - Lime: 1 juiced
  • - Tomatoes: 2 diced
  • - Avocado: 1 sliced
  • - Lettuce: 1 cup shredded

Instructions

  • Start by heating olive oil in a large skillet over medium-high heat.
  • Add the finely chopped red onion and minced garlic, sautéing until they're translucent.
  • Now, introduce your chicken breast, previously sliced into small bite-sized pieces. Season with ground cumin, paprika, salt, and pepper.
  • Cook the chicken until it's beautifully golden and fully cooked through.
  • Time for the black beans! Add them to the skillet, stirring everything to ensure the ingredients merge their flavors.
  • Allow the Chicken and black bean mix to simmer for about 5 minutes on a low flame.
  • Just before turning off the heat, sprinkle fresh coriander and squeeze in that zesty lime juice for a tangy punch.
  • Warm up your tortillas. You can do this on a separate pan or directly over your stove flame if you're careful.
  • Assemble your Chicken and black bean tacos. Lay a tortilla flat, spoon a generous amount of the chicken and bean mix onto it. Add slices of avocado, a sprinkle of diced tomatoes, and some shredded lettuce.
  • Roll or fold your tortilla, and voila! Your Chicken and black bean taco is ready.

Notes

1. For an added kick, include a touch of chili powder or some sliced jalapenos.
2. Consider using whole wheat or corn tortillas for a healthier twist.
3. If you're a cheese lover, sprinkle a bit of shredded cheese on your taco before rolling.
4. For an even juicier taco, consider marinating your chicken in lime juice and spices for about 30 minutes before cooking.
