Ingredients

  • Cooked chicken breast finely diced: 1 cup (225g)
  • Fresh leeks washed and thinly sliced: 1 cup (100g)
  • Fresh mushrooms thinly sliced: 1 cup (100g)
  • Shortcrust pastry: 1 sheet
  • Large eggs: 4
  • Heavy cream: 1 cup 240ml
  • Grated Gruyere or Swiss cheese: 1 cup 100g
  • Fresh thyme leaves: 1 tsp 1g
  • Salt: 1/2 tsp
  • Black pepper: 1/4 tsp
  • Butter or olive oil: 1 tbsp 15ml

Instructions

  • Begin by preheating your oven to 375°F (190°C).
  • Roll out the shortcrust pastry on a floured surface, then gently fit it into a 9-inch quiche dish or tart pan. Trim any excess and prick the base with a fork.
  • In a skillet over medium heat, melt the butter or heat the olive oil. Sauté leeks and mushrooms until they soften and release their moisture, approximately 6-7 minutes.
  • Add the diced chicken to the skillet and sprinkle in fresh thyme. Season with a pinch of salt and pepper. Cook for an additional 2-3 minutes.
  • Spread the chicken, leek, and mushroom mixture evenly over the pastry base.
  • In a mixing bowl, whisk together eggs, heavy cream, grated cheese, salt, and pepper. Pour this custard mixture over the chicken and vegetables in the pastry.
  • Slide the quiche into the preheated oven and bake for 30-35 minutes or until the filling is set and the top has a golden hue.
  • Allow the quiche to cool slightly before serving, enhancing its texture and flavor.
