Start by washing your chicken breasts. Pat them dry and season with salt and black pepper.
In a pan, heat the olive oil over medium-high heat. Add the chicken breasts, cooking them for about 5-7 minutes on each side or until they’re golden brown.
While the chicken is browning, chop the tomatoes, chili pepper, and garlic finely.
Once the chicken is browned, remove them from the pan and set aside.
In the same pan, add garlic and sauté until it’s aromatic but not browned.
Add the chopped tomatoes and chili pepper to the pan. Stir in the red pepper flakes if you’re adding them.
Let the tomato mixture simmer for about 10 minutes. Stir occasionally until it thickens into a rich sauce.
Return the chicken breasts to the pan. Add the chicken stock.
Cover the pan and let it simmer for another 15 minutes. This ensures the Chicken with Spicy Tomato Sauce is flavorful and tender.
