While your fries are baking, heat a skillet on medium.
Add the ground beef to the skillet, breaking it up with a spatula as it cooks.
Once it starts to brown, add the chopped onion and minced garlic.
Continue to cook until the beef is well browned and the onions are translucent.
Stir in the red kidney beans, chili powder, remaining salt, pepper, and red pepper flakes.
Let the chili mixture simmer for about 10 minutes, allowing the flavors to meld.
Once the fries are golden and crispy, remove them from the oven.
Spread a layer of chili mixture over the fries.
Sprinkle the grated cheddar cheese generously on top.
Return to the oven and broil for 2-3 minutes, just until the cheese is melted and bubbly.
