Ingredients

For the Crepes:

  • - 1 cup of all-purpose flour about 125g
  • - 2 eggs
  • - 1/2 cup milk 120ml
  • - 1/2 cup water 120ml
  • - 2 tbsp melted butter about 30g
  • - A pinch of salt

For the Chocolate Peanut Butter Filling:

  • - 1/2 cup creamy peanut butter about 125g
  • - 1/4 cup unsweetened cocoa powder about 25g
  • - 2-3 tbsp maple syrup or honey 30-45ml
  • - 1/2 tsp vanilla extract about 2.5ml

Instructions

Making the Crepes:

  • In a mixing bowl, combine the flour and salt.
  • Beat the eggs and add them to the bowl.
  • Gradually add in the milk and water, stirring to combine.
  • Mix in the melted butter, ensuring a smooth consistency.
  • Heat a lightly oiled frying pan over medium-high heat.
  • Pour a 1/4 cup of the batter into the pan, tilting the pan in a circular motion so the batter coats the surface evenly.
  • Cook the crepe for about 2 minutes until the bottom is lightly golden.
  • Flip and cook the other side.

Preparing the Chocolate Peanut Butter Filling:

  • In a bowl, mix the peanut butter, cocoa powder, maple syrup, and vanilla extract.
  • Stir until the mixture becomes smooth and well combined.

Assembly:

  • Once the crepes are done, spread a generous amount of the chocolate peanut butter mixture over half of the crepe.
  • Fold the other half over.
  • Roll it up and voila! Your Chocolate Peanut Butter Crepe is ready.

Notes

TIPS
1. For an added twist, you can sprinkle some crushed nuts on top of the filling before rolling the crepe.
2. If the batter seems too thick, add a bit more milk to reach the desired consistency.
3. Always keep the frying pan at medium heat to prevent the crepes from burning.
4. Store leftover filling in the refrigerator and use it as a spread for toast or muffins!
