Start by preheating your oven to 325°F (165°C).
In a large bowl, mix your rolled oats with the unsweetened cocoa powder and salt. Set this mixture aside.
In a microwave-safe bowl, combine the coconut oil, peanut butter, and honey. Microwave for about 30 seconds or until they blend smoothly.
Stir in the vanilla extract to this wet mixture.
Pour the wet mixture over the dry ingredients in your large bowl.
Mix thoroughly until all the oats are well-coated.
Spread out the Chocolate Peanut Butter Granola mixture evenly on a baking sheet lined with parchment paper.
Bake in the oven for about 10-15 minutes. Make sure you stir the granola at least once during this time to avoid any burnt bits.
Once baked, remove it from the oven and let it cool.
As it cools, the granola will become crunchier.
Once completely cooled, stir in the dark chocolate chips (and dried fruits if you’re using any).
