Ingredients

  • All-purpose flour: 1 cup 240g
  • Cocoa powder: 2 tablespoons 30g
  • Baking powder: 2 teaspoons 10g
  • Salt: 1/4 teaspoon 1.5g
  • Eggs: 2 large
  • Milk: 1 cup 240ml
  • Vanilla extract: 1 teaspoon 5ml
  • Unsweetened peanut butter: 3 tablespoons 45g
  • Honey or maple syrup: 2 tablespoons 30ml
  • Unsalted butter for cooking: 1 tablespoon (15g)

Instructions

  • Prep Ahead: In a large mixing bowl, combine the all-purpose flour, cocoa powder, baking powder, and salt. Whisk these dry ingredients well.
  • In another bowl, beat the eggs, then add the milk, vanilla extract, peanut butter, and your choice of sweetener (honey or maple syrup). Whisk until the mixture is smooth.
  • Pour the wet ingredients into the dry mixture. Stir until just combined. Don’t overmix; a few lumps are okay and ensure fluffy Chocolate Peanut Butter Pancakes.
  • Heat It Up: Place a non-stick skillet over medium heat and add a touch of butter.
