Ingredients

FOR OUR FLUFFY PANCAKES:

  • A cup of cottage cheese. That’s about 240 grams.
  • Two lovely eggs large-sized please.
  • Half a cup of the flour that’s just sitting there in your pantry. 60 grams, just to be exact!
  • One fourth cup of whole milk. Yeah that’s another 60 ml.
  • A teaspoon of baking powder about 5 grams or so.
  • Oh and don’t forget the salt! Just a pinch.
  • FOR THE WRAP-TASTIC FILLING:
  • Your favourite fruits all fresh and sliced.
  • Some honey or maple syrup for that sweet zing.
  • Fancy some crunch? Throw in some nuts or seeds.

Instructions

  • Throw in cottage cheese, eggs, flour, milk, baking powder, and salt into a blender. Give it a whirl till smooth, say a minute or so.
  • Pancake Parade:
  • Get a non-stick skillet warmed up on medium heat. Pour 1/4 cup of the batter for each pancake, flip it in 2 minutes or until golden brown.
  • Wrap and Roll:
  • Place each pancake on a flat surface, let the fruits rain on it with a drizzle of honey or maple syrup. Fold it up like a wrap. Add some nuts or seeds to jazz it up.
  • Serve with Love:
  • Voila! Your Cottage Cheese Pancakes Wraps are ready to dig in!

Notes
