Egg Whites from 4 big ol’ eggsthat’s about 120 ml
A pinch of Saltlet’s say 1/4 tsp or 1.25 g
A sprinkle of Black Pepperanother 1/4 tsp or 0.5 g
FOR THE SPINACH GOODNESS:
Fresh Spinach2 cups (about 60 g – the fresher, the better)
A clove of Garlicminced (around 3 g)
A dash of Olive Oil1 tsp or 5 ml
Feta Cheesecrumbled (2 tbsp or 30 g, yum!)
Whole Wheat Tortillas: 2 of ’emaround 60 g each
Instructions
Heat that olive oil, throw in the garlic, and give it a minute.
Toss in the spinach, cook ’til wilted, then add the feta.
Set aside (Resist the urge to snack on it now!)

Beat the egg whites with salt & pepper.
Cook ’em up in a pan for 2-3 minutes.
