Ingredients

  • - White rice: 1 cup 240ml
  • - Pineapple chunks: ½ cup 120ml
  • - Sliced strawberries: ½ cup 120ml
  • - Blueberries: ½ cup 120ml
  • - Chopped mango: ½ cup 120ml
  • - Chopped kiwi: 2 two
  • - Mint leaves: a handful chopped
  • - Lemon zest: 1 teaspoon
  • - Olive oil: 1 tablespoon 15ml
  • - Salt: to taste

Instructions

  • Start by rinsing your rice under cold water until the water runs clear.
  • In a saucepan, combine the rice with 2 cups (480ml) of water. Bring it to a boil, then reduce the heat and let it simmer for about 20 minutes or until the rice is tender and fully cooked.
  • While the rice is cooking, take a large mixing bowl. Throw in the pineapple chunks, sliced strawberries, blueberries, chopped mango, and kiwi.
  • In a separate small bowl, whisk together the olive oil, lemon zest, and salt to make a light dressing.
  • Once the rice is cooked, let it cool for a bit.
  • Mix the cooled rice with the fruit mixture.
  • Pour the dressing over the Fruity rice salad and toss everything together gently.
  • Finally, sprinkle the chopped mint leaves on top for an added layer of freshness.
