Ingredients

  • Chicken breasts: 2 500g
  • Olive oil: ¼ cup 60ml
  • Fresh rosemary: 1 sprig
  • Fresh thyme: 1 sprig
  • Fresh basil: 2 leaves
  • Garlic cloves minced: 3
  • Salt: ½ teaspoon 2.5g
  • Black pepper: ¼ teaspoon 1.25g
  • Lemon zest: from 1 lemon
  • Lemon juice: 2 tablespoons 30ml

Method

  1. Begin by preparing your chicken. Ensure they’re clean, patted dry, and devoid of any excess fat.
  2. In a mixing bowl, combine your olive oil, minced garlic, lemon zest, and lemon juice.
  3. Chop the fresh herbs finely and add them to the mixture. This includes your rosemary, thyme, and basil.
  4. Season the mixture with salt and black pepper. Stir well until all ingredients are perfectly combined.
  5. Immerse your chicken breasts in the herb-infused oil. Let them marinate for a minimum of 30 minutes, ensuring they’re well coated.
  6. Preheat your grill to medium-high heat.
  7. Once heated, place the chicken on the grill. Cook for 6-7 minutes on each side or until the internal temperature reads 165°F (74°C). Make sure to baste the chicken with the herb-infused oil occasionally.
  8. Once cooked, remove the chicken from the grill. Allow it to rest for about 5 minutes before serving.

Notes

For deeper flavor, marinate the chicken in the herb-infused oil overnight in the refrigerator.
Always ensure your grill is clean and well-oiled to prevent sticking.
A meat thermometer is your best friend. It ensures your Grilled Chicken with Herb Infused Oil is cooked perfectly every time.
