Start by prepping your shrimp. Make sure they're peeled, deveined, and washed. Pat them dry with a paper towel.
In a bowl, mix together the chipotle powder, minced garlic, lime zest, lime juice, and olive oil. This will form your marinade.
Toss the shrimp in the marinade. Make sure each piece is well-coated. Let it sit for about 10-15 minutes to absorb the flavors.
While the shrimp is marinating, you can prepare your tortillas. Warm them up on a skillet or directly over the flame until they're slightly charred.
After marinating, heat a grill or grill pan over medium-high heat. Once hot, place the shrimp on the grill. Cook each side for 2-3 minutes or until they're pink and slightly charred.
Now, it's assembly time. Lay out a tortilla, place a generous amount of sliced red cabbage on it, followed by grilled shrimp.
Add slices of avocado on top of the shrimp. Sprinkle some fresh cilantro.
Drizzle a bit of sour cream over the top for added creaminess.
Season with salt and pepper to taste. Squeeze a bit more lime juice if desired.
Repeat the process with the remaining tortillas.
