Ingredients

  • 4 boneless skinless chicken breasts (approximately 1.8 kg / 4 lbs)
  • 1 cup of fresh lemon juice approximately 240 mL
  • 4 cloves of garlic minced
  • ¼ cup of olive oil approximately 60 mL
  • 1 tablespoon of fresh rosemary chopped (approximately 15 mL)
  • 1 tablespoon of fresh thyme chopped (approximately 15 mL)
  • Salt and pepper to taste

Instructions

  • Start by marinating the chicken. In a bowl, combine the lemon juice, minced garlic, olive oil, chopped rosemary, thyme, salt, and pepper.
  • Add the chicken breasts to the marinade, ensuring they are fully covered. Marinate for at least 30 minutes, or for best results, overnight in the refrigerator.
  • Preheat your grill to medium-high heat.
  • Remove the chicken from the marinade, shaking off any excess. Discard the marinade.
  • Place the chicken on the grill, and cook for approximately 7-8 minutes on each side, or until the internal temperature reaches 165°F (74°C).

Notes

Marinating the chicken overnight allows the flavors to infuse more deeply.
Always use fresh herbs over dried ones for better flavor.
