Ingredients

  • Salmon fillets: 2 pieces about 6 oz [170g] each
  • Olive oil: 2 tablespoons 30ml
  • Salt: 1/2 teaspoon 2.5g
  • Black pepper: 1/4 teaspoon 1.25g

For the Berry Compote:

  • Mixed berries blueberries, raspberries, and strawberries: 1 cup (150g)
  • Fresh lemon juice: 2 tablespoons 30ml
  • Sugar: 2 tablespoons 30g
  • Water: 2 tablespoons 30ml

Instructions

  • Preheat your grill to a medium-high heat.
  • While the grill heats up, drizzle olive oil over the salmon fillets.
  • Season both sides of the salmon with salt and pepper.
  • Place the salmon fillets skin-side down on the grill.
  • Cook for 6-8 minutes, then flip and grill for an additional 3-5 minutes. The Grilled Salmon should be slightly opaque in the center.
  • While the salmon is grilling, let’s prepare the Berry Compote. In a saucepan, combine mixed berries, lemon juice, sugar, and water.
  • Bring the berry mixture to a gentle boil, then reduce heat and simmer for about 10 minutes until it thickens.
  • Once thickened, remove from heat and allow to cool.
  • Serve the Grilled Salmon hot and generously topped with the Berry Compote.

Notes

  • For a charred exterior and a juicy interior, don’t move the salmon too much once it’s on the grill.
  • Feel free to swap out the berries in the compote based on seasonality or personal preference.
