Start by pressing your tofu. Lay tofu on a towel, place another towel on top, and then add a heavy pan on top. Let it press for at least 15 minutes. This will help remove excess water.
While tofu is pressing, let’s make the Mango Salsa. In a bowl, combine mango, red bell pepper, red onion, lime juice, cilantro, and jalapeño (if using). Mix well and set aside in the refrigerator.
Time to marinate the tofu! In a separate bowl, mix together the soy sauce, olive oil, minced garlic, and grated ginger.
Slice tofu into 1/2 inch (1.27cm) thick slices. Place them in the marinade and let them soak for at least 10 minutes on each side.
Preheat the grill to medium-high heat. Once hot, place tofu slices on the grill. Grill each side for 5-7 minutes or until they achieve those beautiful grill marks.
Once grilled, remove the tofu from the heat.
