Ingredients

  • Whole wheat pastry flour: 1 cup 240 ml
  • Baking powder: Just a tsp 5 ml
  • Salt: Half a tsp 2.5 ml
  • Unsalted butter: Cold and cut into tiny bits 1/2 cup (120 ml)
  • Greek yogurt: A generous 1/4 cup 60 ml
  • Golden honey: 3 spoonfuls 45 ml
  • Ripe strawberries: Chopped up 1 cup (240 ml)
  • Protein powder: Vanilla vibes or go unflavored 2 tbsp (30 ml)
  • A whole egg: To make them shine!
  • Powdered sugar: If you’re feeling fancy.

Instructions

  • Get that oven roaring to 375°F (190°C).
  • Big bowl time: Sift together your flour, baking powder, and just a dash of salt.
  • Toss in that butter. Get handsy and mix until you’ve got something that looks like crumbs from breakfast.
  • In goes the yogurt and honey. Fold in your strawberries and protein. You’re going for a soft, slightly sticky dough.
  • Dust off a counter, roll that dough. Aim for rectangle-ish.
  • Divide and conquer: cut into 4 equal bits.
  • Ready a baking tray, lay ’em out, and brush with egg for that glam finish.
  • Into the oven they go! Watch ’em turn a gorgeous golden in about 15.
  • Patience! Let ’em cool a tad.

Notes

Roll with care. Too thin? Too crispy. Aim for plush.
Space is key on that baking sheet. Strudels need personal space too.
Sweet tooth? Drizzle a bit more honey in there.
For our vegan pals: Swap out the butter and ditch the egg wash.
  • Fresh out the oven? A sprinkle of powdered sugar elevates the game.
  • Think smoothie. Think coffee. Perfect partners.
  • And for an extra treat? Side of Greek yogurt. Trust me on this.
