Preheat your oven to 425°F (220°C). While it’s warming up, wash and peel the russet potatoes.
Cut these potatoes into fry-like shapes, ensuring they’re uniform in size. This ensures even cooking.
Toss these fries in 1 tbsp (15 ml) of olive oil, salt, and pepper.
Lay them out on a baking sheet. Pop them in the oven for about 25-30 minutes. They should be golden and crisp.
While the fries are baking, let’s get that chicken ready. Slice the chicken breasts into bite-sized pieces.
Heat the remaining 1 tbsp of olive oil in a skillet over medium heat. Toss in the chicken.
Cook the chicken for 5-7 minutes until it’s no longer pink in the middle. Time to spice things up! Add in the Sriracha sauce and mix well.

Sprinkle the spicy chicken pieces evenly over the fries.
Top it off with that tempting grated cheese.
Put the tray back in the oven for an additional 5-7 minutes or until the cheese has beautifully melted.
