Ingredients

INGREDIENTS:

  • Chicken breasts: 2 approx. 500 grams
  • Russet potatoes: 4 medium-sized about 1 kg
  • Olive oil: 2 tbsp 30 ml
  • Sriracha sauce: 3 tbsp 45 ml
  • Grated cheese Cheddar or mozzarella: 1 cup (250 ml)
  • Green onions scallions: 2, finely chopped
  • Greek yogurt for topping: 2 tbsp (30 ml)
  • Salt: 1 tsp 5 ml
  • Pepper: 1/2 tsp 2.5 ml
  • Preparation & Cooking Time: Approx. 1 hour

Instructions

INSTRUCTIONS:

  • Preheat your oven to 425°F (220°C). While it’s warming up, wash and peel the russet potatoes.
  • Cut these potatoes into fry-like shapes, ensuring they’re uniform in size. This ensures even cooking.
  • Toss these fries in 1 tbsp (15 ml) of olive oil, salt, and pepper.
  • Lay them out on a baking sheet. Pop them in the oven for about 25-30 minutes. They should be golden and crisp.
  • While the fries are baking, let’s get that chicken ready. Slice the chicken breasts into bite-sized pieces.
  • Heat the remaining 1 tbsp of olive oil in a skillet over medium heat. Toss in the chicken.
  • Cook the chicken for 5-7 minutes until it’s no longer pink in the middle. Time to spice things up! Add in the Sriracha sauce and mix well.
  • Once your fries are done, lay them out on a serving tray. It’s time to assemble our High Protein Sriracha Chicken Cheese Fries.
  • Sprinkle the spicy chicken pieces evenly over the fries.
  • Top it off with that tempting grated cheese.
  • Put the tray back in the oven for an additional 5-7 minutes or until the cheese has beautifully melted.
  • Finally, garnish with finely chopped green onions and dollops of Greek yogurt.

Notes

TIPS:
  • For an added protein kick, consider mixing some protein powder in the Greek yogurt.
  • Opt for a low-fat cheese variant if you’re looking to cut back on calories.
    If you’re not a fan of too much spice, you can reduce the Sriracha sauce by half.
