Ingredients

  • Shrimp peeled and deveined: 1 pound (450 grams)
  • Olive oil: 2 tablespoons 30 ml
  • Honey: 3 tablespoons 45 ml
  • Lime juice: 4 tablespoons 60 ml
  • Lime zest: from 1 lime
  • Fresh cilantro chopped: ¼ cup (60 ml)
  • Garlic cloves minced: 3
  • Red pepper flakes: ½ teaspoon 2.5 ml
  • Salt: ½ teaspoon 2.5 ml
  • Black pepper: ¼ teaspoon 1.25 ml

Instructions

  • Preparation: In a bowl, whisk together the olive oil, honey, lime juice, lime zest, chopped cilantro, minced garlic, red pepper flakes, salt, and black pepper.
  • Place the shrimp in the marinade ensuring each one is fully coated. Allow to marinate for at least 15-20 minutes. This will infuse the shrimp with the zesty flavors of the Honey Lime mixture.
  • Preheat your grill to medium-high heat.
  • Thread the shrimp onto skewers, spacing them evenly.
  • Place the skewered shrimp onto the grill.
  • Grill each side for about 2-3 minutes, ensuring a beautiful char without overcooking. Remember, shrimp cooks quickly!
  • Once done, remove from the grill and allow to rest for a minute or two.

Notes

  • Using fresh lime juice makes a huge difference. Avoid bottled lime juice as it lacks the fresh zesty punch.
  • Always opt for large shrimp as they’re easier to skewer and grill.
  • Do not marinate shrimp for too long, as lime can start to ‘cook’ the shrimp, giving it a ceviche-like texture.
  • If using wooden skewers, remember to soak them in water for about 20 minutes before threading the shrimp. This prevents them from burning on the grill.
