  • Fresh parsley – 1/4 cup 60 ml, finely chopped
  • Salt – 1/2 teaspoon 2.5 ml
  • Black pepper – 1/4 teaspoon 1.25 ml
  • Red chili flakes optional – a pinch

Instructions

  • Marination Magic: In a mixing bowl, whisk together the lemon juice, lemon zest, minced garlic, olive oil, honey, half of the chopped parsley, salt, black pepper, and a pinch of red chili flakes (if using).
  • Shrimp Soak: Add the shrimp to the marinade, ensuring they’re well-coated. Let them marinate in the refrigerator for 15-20 minutes.
  • Heat it Up: Preheat your grill to a medium-high setting.
  • Skewer Them: Once marinated, skewer the shrimp. If using wooden skewers, ensure they are pre-soaked to prevent burning.
  • Grill Time: Place the shrimp skewers on the grill. Grill each side for 2-3 minutes until they’re pink and slightly charred.
  • Balsamic Bliss: In a small saucepan, simmer the balsamic vinegar until it reduces to a thick glaze. This should take about 3-4 minutes.
  • Dress Them Up: Once the shrimp are grilled, drizzle them with the balsamic glaze and sprinkle with the remaining chopped parsley.
