Begin by boiling 1 ½ cups of water in a medium-sized pot.
Once the water reaches a rolling boil, add in the couscous.
Turn off the heat and cover the pot. Let it sit for about 5 minutes until the couscous has absorbed all the water.
Fluff the Lemon Herb Couscous Salad base with a fork to separate the grains.
In a separate bowl, whisk together the 2 tablespoons of fresh lemon juice and 3 tablespoons of olive oil. This will create a zesty dressing for your salad.
Add the chopped parsley and mint to the couscous.
Now, toss in the cherry tomatoes, diced cucumber, and red bell pepper.
