Ingredients

  • Couscous: 1 cup approximately 170 grams
  • Fresh lemon juice: 2 tablespoons about 30 ml
  • Olive oil: 3 tablespoons 45 ml
  • Fresh parsley finely chopped: ¼ cup (roughly 15 grams)
  • Fresh mint finely chopped: 2 tablespoons (approximately 10 grams)
  • Cherry tomatoes halved: ½ cup (about 75 grams)
  • Cucumber diced: ½ cup (around 120 grams)
  • Red bell pepper diced: ½ cup (roughly 90 grams)
  • Salt: ½ teaspoon about 3 grams
  • Black pepper freshly ground: ¼ teaspoon (roughly 0.5 grams)

Instructions

  • Begin by boiling 1 ½ cups of water in a medium-sized pot.
  • Once the water reaches a rolling boil, add in the couscous.
  • Turn off the heat and cover the pot. Let it sit for about 5 minutes until the couscous has absorbed all the water.
  • Fluff the Lemon Herb Couscous Salad base with a fork to separate the grains.
  • In a separate bowl, whisk together the 2 tablespoons of fresh lemon juice and 3 tablespoons of olive oil. This will create a zesty dressing for your salad.
  • Add the chopped parsley and mint to the couscous.
  • Now, toss in the cherry tomatoes, diced cucumber, and red bell pepper.
  • Pour the lemon and olive oil dressing over the salad.
  • Season with the ½ teaspoon of salt and ¼ teaspoon of freshly ground black pepper.
  • Give everything a good mix until all ingredients are well combined and the salad is evenly coated in the dressing.
