Ingredients

  • Chicken: 4 boneless skinless chicken breasts
  • Lime: 2 whole limes juiced
  • Salt: 1 tsp 5 g
  • Black Pepper: ½ tsp 2.5 g
  • Garlic Powder: 1 tsp 5 g
  • Olive Oil: 2 tbsp 30 ml
  • BBQ Sauce: 1 cup 240 ml
  • Greek Yogurt: 1 cup 240 ml
  • Tomatoes: 2 medium-sized chopped
  • Red Onion: 1 small finely chopped
  • Cilantro: A handful chopped
  • Jalapeño: 1 seeds removed and finely chopped – optional for added heat

Instructions

INSTRUCTIONS:

  • Begin by marinating the chicken. In a bowl, combine lime juice, salt, black pepper, garlic powder, and olive oil. Mix well.
  • Dip each chicken breast into the marinade, ensuring they are well coated. Let it sit for at least 15 minutes.
  • While the chicken is marinating, let’s prepare the Cream Salsa Sauce. In a bowl, combine Greek yogurt, chopped tomatoes, red onion, cilantro, and jalapeño. Mix until well combined. Set aside.
  • Preheat your BBQ grill to medium heat. Once hot, place the marinated chicken breasts on the grill.
  • Grill each side for about 6-7 minutes or until fully cooked.
  • During the last 2 minutes of grilling, brush the BBQ sauce over the chicken breasts.
  • Once cooked, remove from grill and let them rest for a few minutes.

TIPS:
