Begin by cutting your chicken breast into 1-inch cubes, ensuring they are uniform for even cooking.
In a mixing bowl, combine Greek yogurt, Madras curry powder, minced garlic, grated ginger, olive oil, lemon juice, salt, and pepper. Mix well until smooth.
Add chicken pieces to the marinade, ensuring they’re well-coated. Let this sit for a minimum of 30 minutes or, for best results, overnight in the fridge.
While your chicken is marinating, prepare your broccoli florets. You can blanch them briefly in boiling water for 2 minutes to retain their vibrant color and soften slightly.
Once chicken is marinated, start assembling the skewers. Alternating between chicken pieces and broccoli florets.
Preheat your grill to medium heat. Once hot, place the Madras Chicken Broccoli Skewers on the grill.
Cook for 5 minutes on one side until slightly charred. Flip the skewers and cook for another 5 minutes.
Ensure chicken is fully cooked through, with no pink center. The broccoli should be slightly charred but still crisp.
Remove the skewers from the grill and let them rest for a couple of minutes.
