  • Madras curry powder: 3 tablespoons 45ml
  • Greek yogurt for marinade: 1 cup (240ml)
  • Olive oil: 3 tablespoons 45ml
  • Lemon juice: 2 tablespoons 30ml
  • Garlic cloves minced: 3
  • Ginger grated: 1-inch piece
  • Salt: To taste
  • Black pepper: To taste
  • Red chili flakes optional: 1 teaspoon (5ml)

Instructions

  • Begin by cutting your chicken breast into 1-inch cubes, ensuring they are uniform for even cooking.
  • In a mixing bowl, combine Greek yogurt, Madras curry powder, minced garlic, grated ginger, olive oil, lemon juice, salt, and pepper. Mix well until smooth.
  • Add chicken pieces to the marinade, ensuring they’re well-coated. Let this sit for a minimum of 30 minutes or, for best results, overnight in the fridge.
  • While your chicken is marinating, prepare your broccoli florets. You can blanch them briefly in boiling water for 2 minutes to retain their vibrant color and soften slightly.
  • Once chicken is marinated, start assembling the skewers. Alternating between chicken pieces and broccoli florets.
  • Preheat your grill to medium heat. Once hot, place the Madras Chicken Broccoli Skewers on the grill.
  • Cook for 5 minutes on one side until slightly charred. Flip the skewers and cook for another 5 minutes.
  • Ensure chicken is fully cooked through, with no pink center. The broccoli should be slightly charred but still crisp.
  • Remove the skewers from the grill and let them rest for a couple of minutes.
