Ingredients

  • ½ cup of diced turkey breast 120g
  • 1 cup of shredded cheddar cheese 225g
  • ½ cup of finely chopped spinach 30g
  • ¼ cup of diced bell peppers 60g
  • ¼ cup of diced onions 60g
  • 4 large eggs
  • ½ cup of milk 120ml
  • ½ teaspoon of salt 2.5g
  • ¼ teaspoon of black pepper 1.25g
  • 1 ready-made pie crust

Instructions

  • Preheat your oven to 375°F (190°C).
  • Roll out the pie crust and, using a cookie cutter, create mini crust circles. Fit these into a muffin tin, pressing gently to shape them.
  • In a medium-sized mixing bowl, whisk together the eggs, milk, salt, and black pepper until smooth.
  • Mix in the diced turkey, ensuring the turkey is well incorporated within the egg mixture.
  • Stir in the shredded cheddar cheese to the mixture, combining them well.
  • Add in the finely chopped spinach, bell peppers, and onions. Mix everything until all ingredients are well-distributed.
  • Carefully pour or spoon the egg mixture into each mini crust, filling them about 3/4 of the way full.
  • Place the muffin tin in the oven and bake the Mini Turkey Cheddar Quiches for 20-25 minutes or until the centers are set and the edges are golden brown.
  • Once done, remove from the oven and let them cool for 5 minutes before serving.

Notes

Tips: 
  • Want to add a kick? Consider sprinkling a tiny bit of chili flakes into your mixture for that extra spice.
  • Make sure not to overfill your crusts; they might spill over or not cook evenly.
  • For a dairy-free version, replace milk with a dairy-free alternative like almond milk or oat milk. Just ensure it’s unsweetened.
  • These quiches freeze well! After baking, allow them to cool completely, and then store in an airtight container. They can be frozen for up to a month.
