Ingredients

  • 2 boneless skinless chicken breasts
  • 1 teaspoon ground cumin
  • 1 teaspoon ground paprika
  • ½ teaspoon ground turmeric
  • ½ teaspoon ground cinnamon
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • 4 slices of whole grain bread
  • ½ cup grated mozzarella cheese
  • ¼ cup chopped fresh cilantro
  • ¼ cup plain Greek yogurt

Instructions

  • n a bowl, mix cumin, paprika, turmeric, cinnamon, salt, and pepper.
  • Rub the spice mixture evenly over the chicken breasts. Let them marinate for 30 minutes.
  • Heat olive oil in a skillet over medium-high heat. Cook the chicken for 6-8 minutes per side, until cooked through.
  • Remove the chicken from the skillet and let it rest for a few minutes. Slice it into thin strips.
  • Preheat a panini press or grill pan. Place 2 slices of bread on a clean surface.
  • Layer sliced chicken, mozzarella cheese, and chopped cilantro on one slice of bread. Top with the other slice to make a sandwich.
  • Grill the sandwich in the panini press or grill pan until the bread is golden and the cheese is melted.
  • Remove the sandwich from the heat and let it cool slightly.
  • Cut the sandwich diagonally and serve with a dollop of Greek yogurt on the side.
