Ingredients

  • * Mussels - 2 lbs 900 grams
  • * Onion - 1 medium-sized finely chopped
  • * Garlic - 2 cloves minced
  • * Potatoes - 2 large peeled and diced
  • * Carrots - 2 medium peeled and diced
  • * Celery - 2 stalks chopped
  • * Fresh thyme - 1 tsp 5 ml
  • * Fresh parsley - 2 tbsp 30 ml, chopped
  • * Heavy cream - 1 cup 240 ml
  • * Chicken broth - 2 cups 475 ml
  • * Olive oil - 2 tbsp 30 ml
  • * Salt and pepper - to taste

Instructions

  • Begin by cleaning the mussels. Place them in a large bowl of cold water and let them soak for about 10 minutes. Scrub with a brush and remove the beard.
  • In a large pot, heat the olive oil over medium heat. Add the onions, garlic, carrots, and celery. Cook for 5 minutes until the vegetables are soft.
  • Pour in the chicken broth. Bring the mixture to a boil.
  • Add the diced potatoes and lower the heat. Let them simmer for about 10 minutes, or until the potatoes are soft.
  • Stir in the cleaned mussels. Cook them until they open, which should take about 5-7 minutes.
  • Pour in the heavy cream and add the fresh thyme. Stir well.
  • Season with salt and pepper according to your taste.
  • Simmer the Mussel chowder for an additional 5 minutes.
  • Garnish with freshly chopped parsley before serving.
