Ingredients

  • Peanut Butter: 1 cup 240 ml
  • Granulated Sugar: 3/4 cup 180 ml
  • Brown Sugar packed: 1/2 cup (120 ml)
  • Egg: 1 large
  • Vanilla Extract: 1 teaspoon 5 ml
  • Baking Powder: 1/2 teaspoon 2.5 ml
  • Salt: 1/4 teaspoon 1.25 ml
  • All-Purpose Flour: 1 1/4 cups 310 ml

Instructions

NOW, THE FUN PART: INSTRUCTIONS

  • First things first. Preheat your oven to 375°F (190°C). Ready a cookie sheet by lining it with parchment paper.
  • Grab a mixing bowl. Combine the peanut butter, granulated sugar, brown sugar, and egg. Mix until you get a creamy consistency.
  • Now, add in that vanilla extract, giving it a good mix to ensure even distribution.
  • In a different bowl, whisk together your baking powder, salt, and all-purpose flour.
  • Gradually add the dry ingredient mixture into your peanut butter mix. Stir until just combined.
  • Time to shape! Take small chunks and form them into balls. Place them onto your cookie sheet. Flatten slightly with a fork, making a crisscross pattern.
  • Pop these bad boys in the oven. Bake for about 10 minutes or until they’ve turned a beautiful golden brown.
  • Once baked, let them sit for a couple of minutes. Then, transfer them to a cooling rack. Cool completely and voila! You’ve got your batch of Rich Knapp’s Peanut Butter Cookies ready!
