Start by preheating your oven to 400°F (200°C).
In a mixing bowl, combine the drained tuna, curry powder, mayonnaise, salt, and pepper.
Mix thoroughly until it's well-blended.
Spread the tuna mixture evenly on one slice of bread.
Place the second slice on top and press down gently.
In a separate bowl, toss jicama fries in olive oil, salt, and pepper.
Ensure each fry is coated evenly.
Arrange jicama fries on a baking sheet, making sure they are spaced out.
Place both the sandwich and jicama fries into the oven.
Bake the jicama fries for about 20 minutes, turning them halfway through.
This ensures even cooking.
For the last 5 minutes of baking, sprinkle shredded cheddar on top of the tuna melt.
This allows the cheese to melt perfectly.
Once done, remove from the oven and let cool slightly.
Garnish with chopped parsley.
