Ingredients

  • 1 cup of Greek yogurt 240 ml
  • 2 scoops of chocolate protein powder about 60g
  • ¼ cup of unsweetened cocoa powder 30g
  • ¼ cup of honey or maple syrup 60 ml
  • 8 whole grain biscuits
  • ½ tsp of vanilla extract 2.5 ml
  • A pinch of salt

Instructions

  • Getting the Mix Ready: In a mixing bowl, combine Greek yogurt, chocolate protein powder, cocoa powder, and honey (or maple syrup). Mix well until smooth.
  • Add vanilla extract and a pinch of salt. Stir well.
  • Lay out 4 of the whole grain biscuits on a tray.
  • Generously scoop the protein-packed chocolate ice cream mixture onto each biscuit.
  • Place another biscuit on top, pressing gently to form an ice cream sandwich.
  • Once all the sandwiches are ready, place them in the freezer.
  • Allow the Protein-Packed Chocolate Ice Cream Sandwiches to freeze solid, roughly about 4 hours.

Notes

For an even richer flavor, try adding a tablespoon of peanut or almond butter to the mix.
When pressing the biscuits together, be gentle! You don’t want the ice cream squeezing out the sides.
For added texture, consider rolling the edges of the Protein-Packed Chocolate Ice Cream Sandwiches in crushed nuts or coconut flakes before freezing.
