In another bowl, combine the coconut sugar, pumpkin purée, almond milk, eggs, melted coconut oil, and vanilla extract.
Slowly fold the wet ingredients into the dry mixture. Ensure there are no lumps.
Grease your donut mold or pan.
Pour the batter into the mold, filling each cavity three-quarters full.
Bake in the oven for 12-15 minutes or until a toothpick comes out clean when inserted.
Once baked, allow the Pumpkin Spice Protein Donuts to cool for 5 minutes before transferring them to a cooling rack.
