Ingredients

  • QUINOA GOODNESS:
  • Quinoa the star: 1 cup (185g)
  • Water simple but necessary: 2 cups (480ml)
  • A pinch of salt: Trust me it matters!
  • VEGGIES FOR ROASTING:
  • Olive oil: 2 tablespoons 30ml (the good stuff!)
  • Sweet potatoes carrots, zucchini, bell peppers, red onion: 1 cup each (200g, 130g, 120g, 150g, 75g), all chopped up
  • Garlic: 2 cloves minced (love that aroma!)
  • Salt and Pepper: Sprinkle to your heart’s content
  • TO TOP IT ALL OFF:
  • Lemon juice: 2 tablespoons 30ml
  • Fresh herbs like parsley or cilantro: A handful just grab some!

Instructions

  • Veggie Prep: Chop those veggies. Get the oven hot at 400°F (200°C).
  • Veggie Roasting Time: Mix ’em with olive oil, salt, and pepper. Into the oven for 25-30 minutes.
