Preheat your oven to 375°F (190°C).
Place the fish fillets on a baking tray, and evenly spread 2 tablespoons of satay sauce on each fillet.
Bake the fish for 15-20 minutes or until it easily flakes with a fork.
While the fish is baking, heat olive oil in a wok or large skillet over medium-high heat.
Add the garlic and ginger, sautéing for 1-2 minutes.
Toss in the broccoli, snow peas, and red bell pepper.
Stir-fry the veggies for 5-7 minutes or until tender-crisp.
Drizzle the soy sauce over the stir-fried greens and toss to combine.
Once the fish is done, plate it alongside the stir-fried greens.
