Ingredients

  • - Chicken breasts 2 (about 1 lb or 450g)
  • - Egg noodles 7 oz (200g)
  • - Peanut butter creamy, 5 tbsp (75g)
  • - Soy sauce 2 tbsp (30ml)
  • - Honey 1 tbsp (15ml)
  • - Fresh ginger minced, 2 tsp (10g)
  • - Garlic cloves minced, 2
  • - Lime juice 1 tbsp (15ml)
  • - Red chili flakes ½ tsp (adjust to taste)
  • - Coconut milk ½ cup (120ml)
  • - Water ¼ cup (60ml)
  • - Fresh cilantro coriander, chopped, for garnish
  • - Green onions spring onions, chopped, for garnish
  • - Salt to taste
  • - Olive oil or vegetable oil 1 tbsp (15ml)

Instructions

  • Begin by cutting the chicken breasts into thin strips. Season with a pinch of salt.
  • In a pot, boil water and cook the egg noodles according to package instructions. Drain and set aside.
  • In a separate bowl, whisk together peanut butter, soy sauce, honey, minced ginger, minced garlic, lime juice, red chili flakes, and water. This creates your satay sauce.
  • Heat oil in a skillet or pan over medium heat.
  • Add the chicken strips. Cook them until they're golden brown and fully cooked, roughly 6-8 minutes.
  • Pour in the satay sauce mixture and stir well.
  • Slowly add the coconut milk, stirring continuously until the mixture is smooth.
  • Incorporate the cooked egg noodles into the pan, ensuring they’re well-coated with the satay sauce.
  • Let the mixture simmer for 3-4 minutes until heated through.
  • Taste and adjust the seasoning if needed.

Notes

1. Always go for smooth peanut butter as it gives a creamier texture to the satay sauce.
2. To amp up the heat, you can add more red chili flakes or even some diced fresh chilies.
3. Garnishing with fresh cilantro and green onions adds a refreshing touch to this rich dish.
