Ingredients

  • * Smoked fish - 8 oz 227g
  • * Pasta your choice, penne works well - 8 oz (227g)
  • * Fresh cream - 1 cup 240ml
  • * Grated cheddar cheese - 1 cup 115g
  • * Fresh dill chopped - 2 tablespoons (30ml)
  • * Lemon zest - 1 tablespoon 15ml
  • * Olive oil - 2 tablespoons 30ml
  • * Salt - 1 teaspoon 5g
  • * Black pepper - 1/2 teaspoon 2.5g
  • * Freshly chopped parsley - 2 tablespoons 30ml
  • * Crushed garlic - 2 cloves
  • * Fresh spinach - 1 cup 30g
  • * Cherry tomatoes - 1/2 cup 75g

Instructions

  • Start by preheating your oven to 375°F (190°C).
  • Boil the pasta according to the package instructions until al dente.
  • While the pasta cooks, heat the olive oil in a pan.
  • Add garlic and sauté until it's golden.
  • Add the smoked fish, breaking it into flakes as you stir.
  • Stir in the fresh cream and half the cheddar cheese.
  • Add salt, pepper, dill, and lemon zest, stirring well.
  • Once pasta is cooked, drain it and add it to the fish mixture.
  • Incorporate fresh spinach until slightly wilted.
  • Transfer the pasta and fish mix into a baking dish.
  • Sprinkle the remaining cheddar cheese on top.
  • Add cherry tomatoes.
  • Bake in the oven for 20 minutes or until the top turns golden brown.
  • Garnish with fresh parsley before serving.
