Begin with the chicken. In a bowl, mix together the olive oil, chili powder, paprika, garlic powder, salt, and pepper to form a marinade.
Generously brush this spicy marinade over each chicken breast.
Allow them to marinate for at least 15 minutes. Longer if you have the time – the deeper the flavors will penetrate.
While the chicken marinates, let's prepare the mango salsa.
In a mixing bowl, combine the diced mango, red bell pepper, red onion, chopped cilantro, and jalapeño.
Drizzle the lime juice over this mixture, sprinkle a pinch of salt, and give it a gentle stir. Ensure everything is well-mixed.
Heat up your grill (or grill pan) to medium-high heat.
Place the marinated chicken breasts on the grill. Cook each side for about 6-7 minutes or until they're perfectly grilled and the internal temperature reaches 165°F (74°C).
Once grilled to perfection, remove them from the grill and let them rest for a couple of minutes.
Plate up! Lay down your spicy grilled chicken and generously top or side it with the refreshing mango salsa.
