Ingredients

  • Lentils: 1 cup 240 ml
  • Olive oil: 2 tbsp 30 ml
  • Onion chopped: 1 medium-sized
  • Garlic minced: 3 cloves
  • Ground cumin: 1 tsp 5 ml
  • Paprika: 1/2 tsp 2.5 ml
  • Red pepper flakes: 1/4 tsp a pinch for our metric folks
  • Salt: to taste
  • Pepper: to taste
  • Tomato paste: 2 tbsp 30 ml
  • Vegetable broth: 1/2 cup 120 ml
  • Corn tortillas: 6-8
  • Avocado slices lettuce, and diced tomatoes: for garnishing

Instructions

  • Begin by washing and soaking lentils for about 30 minutes prior to cooking. This aids in easier digestion and faster cooking.
  • In a deep pan, heat 2 tbsp of olive oil over medium heat.
  • Add the chopped onions and sauté until they’re soft and translucent.
  • Introduce the minced garlic and sauté for another minute or until aromatic.
  • Now, let’s add in our spices. Combine ground cumin, paprika, and red pepper flakes. Give it a good mix.
  • Pour in the soaked lentils, ensuring they’re well-drained.
  • Stir in tomato paste and mix until the lentils are well-coated.
  • Add vegetable broth, season with salt and pepper, then let it simmer on low heat. Stir occasionally.
  • Cook until lentils are tender and most of the liquid is absorbed, approximately 20 minutes.
