Ingredients

  • Bell Peppers: 4 big bright ones (any color) – halved and de-seeded
  • Ground Turkey: Roughly 1 lb or 450 grams
  • Cooked Rice: A cup 180 grams
  • Onion: 1 small one all finely chopped
  • Garlic: 2 cloves minced like a pro
  • Tomatoes: 2 big ones diced
  • Olive Oil: Just 2 tablespoons 30 ml
  • Cheese if you want: 1/2 cup or 50 grams, shredded
  • Salt: Just a teaspoon 5 grams
  • Pepper: A little shake 1/2 teaspoon (2.5 grams)
  • Paprika: Another shake 1/2 teaspoon (2.5 grams)
  • Fresh Parsley: 1 tablespoon 15 grams, all chopped up
  • TIME REQUIRED
  • Prep: 15 minutes chop, chop!

Instructions

  • Get that Oven Hot: Preheat to 375°F (190°C).
  • Sizzle the Turkey: Heat the oil, toss in the onions and garlic, cook the turkey. You know the drill, roughly 10 minutes.
  • Mix it All Up: Turkey, rice, tomatoes, seasonings, and half the parsley in a big bowl.
  • Stuff those Peppers: Go on, load ’em up with the turkey mixture.
  • Bake ’em: 25-30 minutes, or when the peppers give you that ‘just right’ smile.
  • Cheese? Yes, Please! If you’re a cheese fan, add some and bake another 5 minutes.
  • Finishing Touch: A little parsley on top, and voila! Dinner is served.

TIPS

Pick the Right Peppers: Go for firm ones, trust me!
Prep Ahead: You can make the stuffing a day before. (Shh, don’t tell!)
Hot or Not: Add chili flakes if you like it spicy.
