Ingredients

  • Mushrooms: 8 large button or cremini mushrooms approx. 1 lb or 450g
  • Olive oil: 2 tablespoons 30 ml
  • Garlic: 2 cloves finely minced
  • Spinach: 2 cups fresh (about 100g)
  • Cream cheese: 4 oz 115g
  • Grated Parmesan cheese: 1/4 cup 60 ml
  • Bread crumbs: 1/4 cup roughly 30g
  • Salt: 1/2 teaspoon
  • Black pepper: 1/4 teaspoon

Instructions

  • Start by preheating your oven to 375°F (190°C).
  • Gently remove the stems from the mushrooms.
  • Keep the caps intact. These will be your stuffing vessels!
  • In a medium skillet, heat the olive oil over medium heat.
  • Sauté garlic in the skillet until it’s aromatic but not burnt.
