Start by preheating your oven to 375°F (190°C).
Gently remove the stems from the mushrooms.
Keep the caps intact. These will be your stuffing vessels!
In a medium skillet, heat the olive oil over medium heat.
Sauté garlic in the skillet until it’s aromatic but not burnt.
This usually takes about a minute.
Toss in the fresh spinach.
Sauté until wilted, which should be about 2-3 minutes.
Lower the heat, add cream cheese, parmesan, salt, and pepper.
Mix until the cheeses are melted and well combined.
Remove skillet from the heat and fold in the breadcrumbs.
Fill each mushroom cap generously with the cheesy spinach mixture.
Arrange the stuffed mushrooms on a baking sheet.
Bake for 20 minutes or until the tops are golden.
