Ingredients

  • 8 large crisp lettuce leaves (like the iceberg or butterhead variety)
  • A block of firm tofu weighing about 14 oz (400g)
  • A vibrant mix of veggies think bell peppers, carrots, zucchinis totaling about 2 cups (475ml), diced up nicely
  • 3 tablespoons 45ml of that rich soy sauce
  • 2 tablespoons 30ml sesame oil – trust me, it adds that touch
  • Ginger about a 1-inch piece (2.5cm), chopped so finely you can hardly see it!
  • 3 garlic cloves because well, garlic is life, right? Mince these bad boys.
  • A pinch of drama with 1/2 teaspoon 2.5ml red pepper flakes
  • 2 spring onions giving a fresh little crunch, all chopped up
  • A handful of fresh cilantro because everything’s better with greens
  • The juice of 1 tangy lime to liven things up

Instructions

  • First things first, we gotta get that tofu ready. Wrap it up in a kitchen towel, stack a weighty thing on top, and give it a solid 15 minutes of pressing time.
  • While the tofu’s getting its act together, get a pan nice and hot with some olive oil.
  • Pop in the ginger and garlic. Give them a couple of minutes until they make your kitchen smell like heaven.
  • Bring in the veggie party. Toss them around for 5 minutes or till they look all lively and colorful.
  • Now, crumble that tofu in like it’s the star of the show. Because, well, it is.
  • Drizzle in the soy sauce, sesame oil, those spicy red pepper flakes, and half the lime juice.
  • Give everything a good mingle for about 5-7 minutes. We want the tofu to really get to know all those flavors.
  • Once you’re happy with how things are looking, mix in the spring onions and cilantro.
  • Let’s wrap it up! Spoon your masterpiece into lettuce leaves.
  • Finish it with a squeeze of lime, because why not?
