Ingredients

  • * 4 slices of whole grain bread
  • * 4 large eggs
  • * 2 ripe tomatoes thinly sliced (about 1/4 inch each)
  • * 1 cup cheddar cheese shredded (240ml in metric)
  • * 1 tablespoon unsalted butter 15ml
  • * Salt and pepper to taste
  • * A sprinkle of fresh basil or parsley for garnish (optional)

Instructions

  • Start by heating a non-stick skillet over medium heat.
  • While the skillet heats, butter one side of each slice of bread.
  • Place two slices of bread, butter side down, onto the skillet.
  • On each slice, sprinkle an even amount of cheddar cheese. This will be the gooey base for your Tomato Egg Grilled Cheese Sandwich.
  • Lay tomato slices evenly over the cheese. Season with a pinch of salt and pepper.
  • Crack the eggs into a bowl, then carefully pour one onto each slice of bread, over the tomatoes. Season again with a bit of salt and pepper.

  • Place the other slices of bread on top, butter side up.
  • Cook each side for about 3-4 minutes or until golden brown and the cheese is melted.
