Ingredients

  • Ground turkey: 1 pound 450g
  • Black beans rinsed and drained: 1 can (400g)
  • Olive oil: 2 tablespoons 30ml
  • Red bell pepper finely diced: 1 (medium size)
  • Yellow onion finely chopped: 1 (medium size)
  • Garlic cloves minced: 3
  • Ground cumin: 1 teaspoon 5ml
  • Chili powder: 1/2 teaspoon 2.5ml
  • Salt: 1/2 teaspoon 2.5ml
  • Pepper: 1/4 teaspoon 1.25ml
  • Large lettuce leaves preferably iceberg or romaine: 8

Instructions

  • Begin by heating the olive oil in a large skillet over medium heat.
  • Add the finely chopped onion and minced garlic.
  • Sauté until the onion becomes translucent, which should take about 3 minutes.
  • Introduce the ground turkey to the skillet.
  • Cook, breaking it apart with a spoon, until it’s fully browned.
  • Mix in the black beans, diced red bell pepper, cumin, chili powder, salt, and pepper.
  • Cook for an additional 5 minutes or until everything is heated through and well combined.
  • Taste the mixture and adjust seasonings if needed.
  • Remove the skillet from heat.
  • To assemble your Turkey and Black Bean Lettuce Wraps, spoon the turkey and bean mixture onto the center of a lettuce leaf.
  • Top with slices of avocado and a sprinkle of chopped cilantro.
  • Serve immediately with lime wedges on the side.

Notes

TIPS
1. For an added crunch, consider adding some diced cucumber or jicama to your wraps.
2. Romaine lettuce is a sturdy option, but for a softer bite, butter lettuce is a fantastic choice.
3. If black beans aren’t your thing, swap them out for kidney beans or chickpeas.
4. Not a fan of cilantro? Fresh parsley or chives make a good substitute.
SERVING SUGGESTIONS
Drizzle a light yogurt-based dressing or a squeeze of lime over the Turkey and Black Bean Lettuce Wraps for an extra zesty touch.
Complement these wraps with a side of quinoa salad or a fresh fruit salsa.
For those who enjoy a bit of heat, a dash of your favorite hot sauce can kick things up a notch.
Always serve immediately after assembling to maintain the freshness and crunch of the lettuce.
