Ingredients

  • Turkey Sausage: 1/2 pound 225 grams
  • Egg Whites: 8 large ones you can buy cartons of egg whites too, about 1 cup or 240 ml
  • Fresh Spinach: 1 cup approximately 30 grams
  • Cherry Tomatoes: 1/2 cup halved (about 75 grams)
  • Feta Cheese: 1/4 cup crumbled (60 grams)
  • Olive oil: 2 tablespoons 30 ml
  • Salt: To taste roughly 1 teaspoon or 5 grams
  • Ground Black Pepper: To taste about 1/2 teaspoon or 2.5 grams
  • Red Bell Pepper: 1 diced (about 150 grams)
  • Onion: 1 small finely chopped (about 150 grams)

Instructions

  • Begin by heating the olive oil in a non-stick skillet over medium heat.
  • Add the finely chopped onion to the skillet. Let it sauté until translucent, approximately 3 minutes.
  • Introduce the diced red bell pepper. Allow it to cook with the onion for another 3 minutes.
  • Now, it’s turkey sausage time! Crumble and brown the turkey sausage in the skillet. This usually takes around 5-7 minutes.
  • While the turkey sausage is cooking, in a separate bowl, whisk together the egg whites, salt, and black pepper until frothy.
  • Once the turkey sausage is well-cooked and no longer pink, toss in the cherry tomatoes and fresh spinach. Let it cook until the spinach wilts slightly, around 2 minutes.
  • Pour the frothy egg whites over the turkey sausage and vegetable mixture in the skillet.
